The Foods of Vietnam by Oscar

We have experienced many different and wonderful things in Vietnam, but the most delightful, most exquisite, was simply the food. The food was perfectly balanced, the sweet, sour, and saltiness were all held in a delicate balance, not one more than the other. My favorite dish, the Bun Bo Nam Bo, is noodles, doused in a fermented fish sauce, with basil and beef. This may sound odd to us, but it was amazing, I first tried it halfway through my two-week trip with the Hartshorns, but I had it three more times after that. We all went on two food tours, where we walked around two different cities, Hanoi and Hoi An, and tried local foods that we would not have been able to find ourselves. There were prawns that we ate with the shells, and heads, still on, rice pancakes, yogurt that had the wonderful consistency of snot, but tasted amazing. We even had broth-less Pho, if you know what Pho is, you will be sorely confused, if you don’t, I suggest you look it up. Speaking of Pho, we had SO much of it! We could not get enough of that delicious broth! It is the epitome of comfort food, warm, meaty, with a hint of basil. All in all, out of all the amazing things in Vietnam, the food is superb.
